Easy • One-Pan Dinner • Alpha-Gal Friendly (if you can tolerate dairy)• Budget-Friendly

Make dinner simple with this Sheet Pan Quesadilla recipe — a baked twist on a classic favorite! Layered on a baking pan and baked until melty and golden, they’re perfect for weeknight family meals, casual gatherings, or meal prep (they taste even better the next day in our opinion!) Using shredded chicken, beans, and your favorite veggies, these quesadillas deliver balanced protein and fiber in every bite, and they’re easy to customize based on what you have on hand.

Can’t tolerate dairy? No problem! You can sub dairy-free cheese or hummus for the shredded cheese to help the ingredients stick together!

Where the Nutrition Comes From

  • Lean Protein (Chicken): Shredded chicken breast provides high-quality protein to support fullness, muscle building, and balanced blood sugar.
  • Carbohydrates (Rice & Tortillas): The rice and tortillas offer energy-providing complex carbohydrates and fiber, especially if you choose whole-grain tortillas.
  • Fiber & Micronutrients (Beans + Veggies): Black beans and vegetables add fiber, vitamins, and antioxidants to support digestion and overall health.
  • Healthy Fats & Calcium (Cheese or Dairy-Free Alternative): Cheese contributes calcium and flavor; a dairy-free cheese alternative preserves alpha-gal friendliness while still adding satisfaction.

Tips & Variations

  • Different Protein: Substitute the chicken for fish, turkey, or other meat of choice.
  • Vegetarian Option: Use tofu or tempeh instead of chicken
  • Nutrient Boost: Serve with guacamole for additional fiber and healthy fats!
